A little about the name: "Freki" is more common in the Galilee, while "Freika" is common in Jerusalem and the center of the country. The name comes from the Arabic verb to "separate the grains from the ears," or "to rub/rub."

It is usually cooked like rice with the addition of vegetables and spices, and is used in stews, stuffed (with vegetables, chicken or fish), and also as a base for refreshing salads with herbs and lemon.
